French Toast Waffles

French Toast Waffles
Company's Coming cookbooks might seem 'old school' to some, but they really do have some great recipes! I was browsing through my mom's Breakfast and Brunches and found lots of easy breakfast ideas. Breakfast is the most important meal of the day and it's one I rarely miss out on. French Toast Waffles were awesome and took regular French toast to another level. You will need to dig out your waffle iron to make these. 


(makes 3-6 servings)
2 large eggs
1/2 cup milk
1 tbsp butter or margarine 
Pinch of salt
3-6 pieces of white bread or whole wheat bread

Beat eggs together in shallow bowl. Add milk., butter and salt.
Dip both sides of bread slices into egg mixture. Cook in hot waffle iron until browned. 

To top them off, I made blueberry syrup just for something different and also a great way to squeeze in some fruit! If you are serving these to little ones, cut out the 1 cup of sugar that it calls for and keep it all natural. 

2 cups of blueberries, fresh or frozen 
1 cup sugar
1 1/4 cup water
1/2 tsp lemon juice 

Put all 4 ingredients into blender. Process until smooth.
