Garlic Potatoes

Roasted Garlic 
 Spring is finally here and to celebrate we enjoyed some lovely steaks on the BBQ with some yummy garlic whipped potatoes. Once you  make these your mashed potatoes will never again be boring. To enjoy these potatoes start with one whole garlic, slice the top of it off just to expose the garlic in the pods then drizzle with olive oil, salt, pepper, and some thyme (or other dried herbs). Wrap it up in tin foil and put it in a 375 degree oven for about 40 minutes. Boil your potatoes, drain the water, then add a heaping spoonful of butter/margarine, some milk, salt, pepper, thyme, then squeeze in about 4-5 cloves of the baked garlic. For mashed potatoes use a masher and for whipped potatoes use a mixer until smooth.

These potatoes are an amazing side with whatever you have on the go. Definitely a crowd pleaser!


For dessert, we enjoyed some Angel Food Cake 'shortcakes.' This is just a box mix put into cupcakes (heat oven to 350 degrees and bake for about 15 minutes) with added fruit and whip cream! Happy Spring!
